Hi Roy,
Yes, this can be done by setting all countries to "unpublished" in the Pro2Store backend:
Under "Zones & Taxes >> Countries" you will see the list of countries currently enabled on the site. Select the ones you wish to disable and click "Toggle Published"

thanks that worked.
One more think which is more cosmetic, we only have 1 country so the select form field is redundant. If we have to have a select field could we set in admin the default choice?
