It depends on the total of articles you want to see; that will cause the number you need to set in Joomla.
The tag option in yootheme has also an option to see all items in the category; you'll need to set the number in Joomla on or over the maximum of all articles in the category to be abble to see all items..
I also tried to solve this with subcategories. But than you'll need to make several menu's and let them appear on the different pages.
The tag option is build in in Yootheme, so this was a more easier way to do.

If you have a shop with 50-100 items for sale per category the tag solution works fine.
But what happen if you have more than 500 items per category. You have to load all the articles each time.
And this leads to delays to page loads (this is bad for Google's Pagespeed), to reach the limit of bandwidhts, e.t.c.
I'm thinking a little ahead. What will happen when I will have an eshop with such an amount of items?
